Little Creek Casino Resort Food and Beverage Services-Director in Shelton, Washington

Little Creek Casino Resort is looking for an experienced Food and Beverage Director to manage all aspects of our food and beverage service. In this role, you will oversee F&B operations, ensure quality control, handle procurement, and lead staff training. We're looking for a strategic leader with a focus on delivering excellent guest experiences and driving profitability in a fast-paced, exciting environment. Ideal candidates will have management experience in the food and beverage sector of large hotel chains or major hospitality organizations. ESSENTIAL DUTIES AND RESPONSIBILITIES:

  • Plan, develop, and implement operational policies and goals for the Food and Beverage Department.
  • Assist in planning and launching new food venues, including proforma analysis, equipment purchasing, kitchen workflow planning, and staffing requirements.
  • Collaborate with Marketing to promote products and services, develop new markets, increase market share, and maintain a competitive position in the industry, including planning and arranging promotional programs and advertisements.
  • Analyze facility operations information, such as daily food sales, patron attendance, and labor costs, to prepare budgets and maintain cost control.
  • Review department budget requests to identify potential reductions and allocate operating budgets effectively.
  • Confer with administrative personnel and review activity, operations, and sales reports to determine necessary changes in the Food and Beverage Department programs or operations.
  • Direct the preparation of directives for Food and Beverage Staff outlining policy, program, or operations changes to be implemented.
  • Review weekly food and beverage lists submitted by subordinate staff to ensure sufficient items are ordered, making adjustments as needed.

Requirements

  • Bachelor's Degree in Hospitality, Restaurant Management, Business or related field.
  • 8 years of progressive experience in F&B operations, to include 5 years at a Senior Management Capacity.
  • Minimum 5 years working successfully with financial documents including budgeting and food cost analysis.
  • Must be able to pass a background check.
  • Have or obtain Washington State Food Worker Card.
  • Have or obtain Class 12 Mixologist Permit.
